3-4 pints cooked Beets cut in half, cubed or sliced
Save Beet water unless muddy
2 c Sugar
2 c Beet Water
2 c Vinegar
1 Lemon Slice
(Sack the following in cloth bag)
1 T Cinnamon
1 tsp Cloves
1 tsp Allspice
Put all together and simmer for 15 minutes. Pack in pint jarsNo water bath needed
Hint: When cooking fresh beets be sure and leave about 1 inch of stem attached before placing in a water. The cooking time will vary depending on the size of the beets but the beets should be soft enough to pierce with a knife.
