Artichoke Parmesean Chicken

Artichoke Parmesan Chicken

Place 4 chicken breast in an ungreased baking dish. In a bowl mix.1 can artichoke chunks drained (I use 2 cans, we love artichokes), 3/4 cup mayo (I use 1/2 it is too greasy for me. Low fat makes it watery), 1/2 cup fine grated parmesan cheese. Pour mixture over the chicken and top with 1/4 cup fresh parmesan. Bake at 350 degrees for one hour.

Thanks to Sherry McCall for sharing this with us - sounds like a great recipe. Add a simple green salad, or sliced tomatoes drizzled with a little olive oil, and hot Italian bread with butter. You'd have a great supper without any hard work!
